Recipe: Guacamole Veggie Burgers with Fresh Fries

2 large potatoes
2 ripe avocados
juice from lime/lemon
1/4 cup diced onion
Your favorite veggie burger
You favorite bun/bread
olive oil
white pepper
garlic powder

Start by cutting the potatoes into fries. The easiest way is to cut slices longways, then cut those into stick shapes. Place your potatoes in cold salted water-this will draw the starch out. Next, make your guacamole while the potatoes soak.
You can tell an avocado is ripe when it is deep purple, they are soft but not mushy, and the stem easily falls off.


Cut around the length, halving the avocado. Getting the seed out can be tricky, but a large spoon should work if it is good and ripe. Use the same spoon to scoop out the avocado, following the edge where you cut. Mash the avocado to preferred consistency. A potato masher is ideal, but a fork works just as well.  Add in diced onion, the lime juice, and some salt and a pinch of white pepper. A little goes a long way! The lime juice will help keep the guacamole bright green while it is placed in the fridge.

Drain the fries, then use paper towels to pat dry, especially if you plan on frying them. To fry, cook the fries in small batches in just enough oil to cover at 350 degrees Fahrenheit. If you like extra crispy fries, blanch the fries first by cooking them for about 2 minutes, then repeat the drain/pat dry method. Fry them again to desired crispness! Season fries with garlic and salt as soon as you remove them from the grease. To bake, simply season the fries and arrange on a cookie sheet, drizzle olive oil, and bake at 350 degrees Fahrenheit until golden brown. Next, let’s make our burgers.

Cook the burgers according to package directions. For an extra touch, toast the bun with a drizzle of olive oil. Build the burger by spreading guacamole on both buns. Then layer spinach on the bottom, place burger on next, and top with remaining bun. 

And now you’re ready to eat a fresh, healthier alternative to a classic meal. This recipe is vegan as long as your choice of bread/burger are as well, and you can always add your favorite vegan cheese.
